Taco Salad


      Need a recipe that requires almost no cooking! This is such a refreshing and satisfying salad for a meal. With just a little advanced planning this salad pulls together really quick. Marinate the tofu and mix up some Creamy Coconut Dressing either the night before or in the morning. Perfect for a work night dinner. Enjoy!

Taco Salad
Serve 2-3

Ingredients:
1 T. taco seasoning
2 T. extra virgin olive oil
1 T. lemon or lime juice
1 - 12.3 oz. pkg. Mori-Nu extra firm tofu, cubed

Assorted salad greens, shredded purple cabbage, sliced or chopped cucumber, chopped tomatoes
Assorted toppings- organic corn, black beans, sliced black olives
Pepitas (pumpkin seeds) or fresh cilantro leaves for garnish

Directions:

1. In a small bowl add the taco seasoning, extra virgin olive oil, and lemon or lime juice. Stir to combine. Gently toss in the tofu cubes, coating with all the dressing. Allow to marinate for at least 30 minutes or cover and refrigerate until ready to cook.

2. Before serving, heat a skillet on medium heat. When hot, add the marinated tofu and cook for about 8-10 minutes. Gently toss occasionally so the tofu will evenly heat. Transfer to a serving bowl.

3. Set things out like a salad bar and let each person add their own toppings. Add the tofu last, garnish with pepitas or cilantro and serve with a creamy salad dressing.
