Roasted Red Bell Pepper Hummus
Roasted red peppers add a nice smoky flavor and give a nutritional boost to traditional hummus. This hummus is low in sodium, high in fiber, manganese and very high in vitamin C, all great things for building strong bones. Of course I think it taste great also!
Roasted Red Pepper
Hummus
Makes about 1 ¼ cups or 10 servings
1 serving equals 2 T.
Ingredients:
1 cup cooked garbanzo beans (I used low sodium canned beans)
1/2 roasted red bell pepper*
1/3 cup organic unsalted tahini
1/3 cup fresh lemon juice
1 large clove garlic, minced
Cold press, extra virgin olive oil
Directions:
In a food processor combine all the ingredients except
the olive oil. Process until mixture is smooth.
Transfer mixture to a serving dish. Drizzle top with
about 1 T. olive oil.
