Cannellini Beans & Potatoes
For me, this is a perfect quick, hearty meal for lunch or dinner. It takes me about 20 minutes to make, start to finish. Cooking the potatoes in the microwave, along with using canned or pre-cooked beans helps make the cooking process quick. I hope you find it that easy as well. Not every part of our day needs to be hectic. Preparing a meal is a nice time to slow down. Breathe...breathe again, put on some nice music and maybe even pour a glass of wine. Cannellini Beans
& Potatoes
Serves 3-4

Ingredients:
3 red potatoes, washed & cut into small cubed pieces
3-4 cups of mixed greens (I like spinach & baby kale
greens. Shredded cabbage would also be nice)
2 tsp. coconut oil (or grapeseed oil)
1 large shallot thinly sliced or ¼ C. red onion, diced
1- 15 oz. can Cannellini beans, rinsed & drained or 2 C. pre-cooked beans
¼ C. diced roasted red bell pepper (I buy the jarred
Mezzetta peppers)
1 tsp. rosemary
Salt & Pepper
Balsamic vinegar
Directions:
1. Place the cubed potatoes in a microwave dish with 2 T.
water. Cover and microwave on high for about 5 minutes. Potatoes should be fork
tender. I cook the potatoes in the microwave to speed up the cooking time which also allows me to use less oil when I cook them in the next step.
See note below for alternative cooking method for potatoes if you don't want to use a microwave.
2. In a large non-stick skillet, heat the coconut oil over
medium to medium high heat. Add the shallot, cooked potato and beans. Cook a few minutes until
everything starts to caramelize or brown a bit. Add the mixed greens, bell
pepper and rosemary. Cook a few more minutes, just until the greens wilt. Season to
taste with salt, pepper and a sprinkle of balsamic vinegar.
Notes:
1. If you don’t want to cook the potatoes in the microwave then an alternative is to put the potatoes in a saucepan, add just enough water to cover. Place a lid on the saucepan and simmer for 8-10 minutes.
2. If you don’t have Cannellini beans, try other white beans or some garbanzo beans. For the greens, I buy a box of Organic Taylor mixed greens at the grocery store. I always wash & rinse them before using even though the package says pre-washed.
