'No Tuna' Garbanzo Bean Salad

     



     Garbanzo Bean mock tuna or egg salad recipes have been around for a while. There are as many variations on these recipes as there is for tuna salad. If you haven't yet tried it, I hope you will give this variation on No Tuna or No Egg Salad a try. I enjoy it as a sandwich filling, as an open face breakfast meal on toast, spread for crackers, dip for veggies or scooped onto green salad. 


'No Tuna' Garbanzo Bean Salad
Serves 4- ½ cup servings

Ingredients:

1-15 oz. can garbanzo beans, rinsed & drained
1 celery stick or ¼ cup finely diced celery
1 thin slice of onion or ¼ cup finely diced onion
½ T. ground flaxseed (optional, good source of fiber, lignans & OMEGA-3 fats)
3 T. Vegan mayonnaise
2 T. sweet pickle relish
½ tsp. cumin powder
Salt & pepper to taste
Squeeze of lemon juice, about 1 T.

Directions:

Version 1-
Cut the celery stick and onion into large chunks. Place them in a small food processor and pulse to a course chop. Add the remaining ingredients and pulse a few times, just enough to mix the ingredients.

Version 2-
Mash the garbanzo beans in a bowl with a fork. Add the remaining ingredients and stir to mix.

“No Egg Salad” variation: add 1 tsp. ground turmeric powder and 2 tsp. Dijon or brown mustard

This also works well with Cannellini or white beans. Try to get canned beans with no salt added.
