Quick Tofu Scramble


     Tofu scramble is my really fast meal to prepare when I am feeling hungry but not wanting to put a lot of effort into cooking. It's also a staple meal for a hearty breakfast. I can make this from start to table in less than 20 minutes! Typically I will use spinach or kale but I also am flexible with whatever vegetables I have on hand.


Tofu Scramble
vegan, vegetarian, gluten free
Serves 4
(You can easily half or double this recipe)

1- 12.3 oz. carton Mori-Nu firm tofu, drain liquid
2-3 t. coconut oil 
1/2 large red bell pepper, diced
1 medium carrot, diced
1 celery stalk, diced
½ cup onion, diced
½ cup mushrooms, sliced
1-2 tsp soy sauce or soy sauce substitute
½ t. turmeric 
½ - 1 t. cumin
2 cups baby spinach or kale

Optional-
Sprinkle ground flaxseed on top before serving

Directions:

1. Lightly oil frying pan. Over medium-high, sauté all the vegetables (except spinach or kale) until soft.



2. With spatula, crumble in the tofu.



3. Add the soy sauce, turmeric, cumin, stir to combine.



4. Add spinach or kale, stir in until lightly wilted.



That's it! Enjoy!! Serve with toast and a fruit salad.
