Moroccan Spiced Sweet Potato Wedges


     Serve these Spiced Sweet Potato Wedges as a side dish or enjoy as a snack.


Spiced Sweet Potato Wedges
Serves 4

Ingredients:
1 T. coconut oil
3-4 sweet potatoes (about 2-2 ½ lbs.)
1/2 tsp. ground turmeric
1/4 tsp. ground ginger
1 tsp. ground cumin
1 tsp. paprika
1/4 tsp. black pepper
1/2 tsp. Hawaiian salt (or other sea salt, I like to use what I have on hand)



Directions:

1. Preheat oven to 425°. Line a baking sheet with parchment paper.

2. Wash sweet potatoes and cut into even wedges, about 4” length. Leave skins on the potatoes.

3. In a small bowl combine the spices. 



4. In a large bowl, toss the sweet potato wedges with the coconut oil. If your coconut oil is solid, place it in a small dish and heat it in the microwave about 15 seconds to soften. Sprinkle in the spices and stir to evenly spread coat the sweet potatoes with the spices.

 


5. Spread the sweet potatoes in a single layer on the baking sheet. Bake for 15 minutes. Insert a knife into a few potato wedges to check for doneness. 


     If you are making this for kids you may want to omit the ginger and black pepper, substitute it with cinnamon. For a sweeter snack, substitute the salt with sugar.
