Chocolate Tofu Mousse
Serves 4
Vegan, dairy free
Ingredients:
2/3 c. dairy free chocolate chips
1 T. water
Mori-Nu Soft Silk Tofu
½ t. almond or vanilla extract
2-4 T. powdered sugar (start w/ 2 T., add more for your
taste)
Directions:
1. Place a wire mesh strainer over a small bowl. Line it
with a coffee filter. Put the tofu on top of the coffee filter. Break up the
tofu to fit in the strainer. Place a bowl on top of the tofu, then weight the
bowl with a small can. Allow to sit for about 15 minutes to press out the
excess water.
2. Place the chocolate chips in a microwave dish with 1
T. water. Microwave at 20 second intervals, stirring in between, until
chocolate is melted.
3. Add the tofu, melted chocolate, almond or vanilla
extract and 2 T. powder sugar to a small food processor. Scrap the sides at
least once. Puree until creamy and smooth.
4. Spoon into serving bowls, chill at least 2-3 hours.
The longer you chill this the better the flavor will be. Tofu absorbs flavors
so give it time for the chocolate and tofu to mingle.
I used this mousse as one of the fillings in Valentine's Day Dessert Towers.
