Dairy Free Vodka Pasta Sauce


Serves 4-6
Vegan, dairy-free

Ingredients:
2 T. virgin coconut oil
2 shallots, minced
2 cloves garlic, minced
1 T. dried Italian seasoning
pinch of red pepper flakes
2- 15 oz. cans diced fire roasted tomatoes
or 1- 32 oz. can crushed tomatoes
1/2 cup vegetable stock or water
1/2 cup vodka
1/2 cup cashew cream (recipe)
handful of fresh basil leaves

Directions:

1. In a large skillet, on medium heat, heat the coconut oil. Add the shallots and sauté for about 3 minutes, then add the garlic and sauté another minute.

2. Add the Italian seasoning, red pepper flakes, tomatoes, vegetable stock and vodka. Simmer for 15- 20 minutes. Add salt and pepper to taste.

3. Stir in the cashew cream and torn basil leaves. Simmer 5 more minutes. Remove from heat and serve with cooked pasta.

If you would like this creamy without chunks, blend sauce in a blender or use an immersion blender.
