Pomegranate Mint Glaze for Grilling



Pomegranate Mint Glaze
Makes 1/2 cup

2 1/2 T. Pomegranate Molasses
2 T. tomato paste
2 T. olive oil
1/2 t. ground cumin
1/4 cup coconut sugar
1/4 cup water
1/8 t. black pepper
1/4 t. salt
3 T. chopped fresh mint (I just stack about 20 leaves and chiffinade them with kitchen shears)

Add all the ingredients to a small sauce pan. Bring to a slow simmer over medium heat. Whisk ingredients together and slow simmer for about 5 minutes. Cool mixture. If not using right away, store in refrigerator.

Brush glaze on while grilling kebobs, tofu, eggplant slices, etc..
