Creamy Cilantro and Avocado



     Unless I am making a stir fry, I make salads almost everyday. The climate here in Guam stays the same year round so it is easy to eat lots of salads. I usually start with a base of lettuce and assorted veggies. Then I add some protein with beans, peas and nuts. Some times I like to add fruit. Tonight's salad was inspired by an avocado I had that needed to get used and the flourishing cilantro growing in my garden. Salads are great creative no-cook meals!

Creamy Cilantro and Avocado 
Makes about 1 ¼ cup

This can be used as a dip or thinned to make a dressing.

Ingredients:
1 small ripe avocado (about 1 cup of avocado)
½ cup plain Greek yogurt*
1 cup cilantro, loose packed
1 clove garlic, sliced
1 T. lime juice
¼ t. salt
¼ t. pepper

*for a dairy free alternative use coconut or soy yogurt. You could also use Vegenaise instead of yogurt to make this as an avocado sandwich spread. 

Directions:

Place all the ingredients in a food processor and grind until smooth. The mixture will be thick and good to use as a dip. 

For a salad dressing, thin to desired consistency with milk.
