Cucumber and Tomato Raita
Raita is a very soothing and cooling yogurt dish. It is so delicious that it can easily be eaten all by itself. Serve raita with a spicy Indian dish to help counter the chili heat or accompany a rice dish. Raita can be used as a condiment, dip, side dish or as a salad. There are lots of combinations of raita, such as mint raita, carrot raita or spinach raita.
Cucumber and Tomato Raita
Serves 4
Ingredients:
2 cups plain yogurt (I used Greek yogurt and thinned a little with milk)
1/4 teaspoon garam masala
1/4 teaspoon cumin powder
dash of chili powder
1 Roma tomato, seeded and diced small
1- 6" piece of English or Japanese cucumber, finely diced
a few sprigs of cilantro, chopped (or a small handful of mint leaves)
In a small bowl, stir together the yogurt and spices. Add the tomato, cucumber and cilantro. Stir to combine. Serve chilled.
