Apple Walnut Brown Rice Salad



     The only cooking involved in this recipe is cooking the rice. The rest is chopping ingredients and tossing with a dressing. Super easy! This is a perfect salad for packing in a lunch box, taking to the beach or on a picnic. Don't wait for the weather to be perfect! Get out and go some place or have an indoor picnic :-) 


Apple Walnut Brown Rice Salad

This recipe can easily be cut in half for a smaller amount.

Ingredients:
3 cups cooked brown rice*
1 medium red apple (like Gala or Fiji), cored and chopped
½ lemon
½ cup diced celery
½ cup diced cucumber
¼ cup fresh parsley chopped
3 T. raisins
¼ cup chopped walnuts

Dressing-
2 T. extra virgin olive oil
2 T. apple cider vinegar
2 T. pure maple syrup
½ t. black pepper
½ t. salt

*1 cup of dry rice makes about 3 cups cooked rice. 

Directions:

1. Put the rice in a large mixing bowl. Zest the lemon half and add to the rice.

2. Add the apples to a small bowl. Squeeze the lemon onto the apples and stir. Add the apples to the rice bowl.

3. Add the celery, parsley, raisins and walnuts to the rice bowl. Stir to combine.

4. Add the dressing ingredients to a small bowl. Stir to combine. Pour the dressing into the rice bowl, stir to combine the salad ingredients and dressing well.

Serve at room temperature or allow to chill a few hours in the refrigerator.
