Carrot-Mango-Pineapple Smoothie


     I am a blender since I do not have a juicer. Juicing is so popular right now that it has me contemplating getting a juicer. I like juices and all the great combinations you can make but it seems like a waste to discard a lot of the beneficial plant fiber. Yet a juicer will allow me to make more juice varieties than a blender. I've been shopping around for a juicer so will likely end up with one :-) Meanwhile I have been enjoying my blender smoothies. Here is one I made today-

Carrot-Mango-Pineapple Smoothie
Serves 1

2 medium carrots, washed and sliced
4 oz. canned pineapple, crushed or chunks, in their own juice
1/4 - 1/2 cup frozen mango chunks
1 thin slice, fresh ginger, minced
1/2 T. pure maple syrup (optional)

In a small saucepan, cook the carrots in 1/2 cup water.  Add the carrots and the liquid to a blender. Add the remaining ingredients and enough liquid to fill to the 8 oz. marker. You can use some of the pineapple juice or water for the liquid. Pulse the blend to break things up, then blend until smooth. If you want the smoothie thinner add more liquid.

This is a good one to make in advance, like the night before, so that it can chill in the refrigerator. Then it is ready for a quick breakfast or snack.

If you are looking for a juicer, I would look at a cold press appliance as opposed to a centrifugal juicer. I used a high-end cold press juicer when I worked in a professional kitchen but some are now priced for consumer purchase. The overwhelming reason for a cold press juicer is that little heat is introduced in the process. Blenders, while nicely pulverizes when juicing, "cook" the product and there is a loss of some nutrients. Same with the centrifugal juicer. Plus, I think that cold pressers are easier to use than centrifugal machines.
Otherwise, I love your paintings and equally am inspired by this blog. I am going to start tackling your recipes soon and perhaps send you my results! Thanks Kathleen!

Wow Jose I had no idea there were even different kinds of juicers to consider, other than the brands. I was only looking at the size of them. I was leaning towards the smaller ones for my small kitchen. Your comment is very informative so now I better do some research before buying.
